Quinoa Tabouleh*
Prep time: 5 minutes Cooking time: 35 minutes Serves: 6 Ingredients: 1 cup quinoa 2 ¼ cups water 1 cucumber 1 tomato 1 bunch mint ½ bunch parsley 2 tbsp lemon juice 3 tbsp extra virgin olive oil Sea salt to tasteInstructions:
- Wash quinoa and add to boiling water with a pinch of salt
- Reduce heat to low and simmer covered for 20 minutes or until grains are fluffy and water is absorbed
- Fluff with fork, cover and let sit for 10 minutes
- Prepare veggies while quinoa is cooking – slice and dice the cucumber & tomato, mince the mint and parsley.
- Transfer quinoa into a large bowl and combine all ingredients.
- Mix gently and taste, adjusting the lemon juice, olive oil, and salt to your taste.
- Enjoy!
