Teff is an ancient Ethiopian grain, dating back to 3359 BC. Tiny in size but not in content, this little firecracker of a grain is packed with some nutrient punch. Teff has a very high calcium content, and contains high levels of phosphorous, iron, copper, aluminum, barium, and thiamin. Naturally gluten free, teff flour can be substituted for regular flour in many baking recipes. Wanna try? Check out our IN THE KITCH page for our favorite teff recipe.
